Ghana Beans Stew with Oxtail & Smoked Mackerel

Hello Family. Beans stew is one of the most popular staple recipes in Ghanaian households. It is a delicious combination of flavours which I always look forward to. I've made mine with black eyed beans which I boiled with 1 table spoon of bicarbonate for around 45 minutes to an hour (until they are very soft). I used Oxtail which I gently boiled with a little chopped onion, garlic, ginger and a pinch of salt for around 2 hours. I used the stock from the Oxtail mixed in with the blended chopped veg to make the base of the stew. Ingredients; Palm Oil Black Eyed Beans Oxtail (or your own choice of meat/veg) Smoked Mackerel 3 Carrots 2 Onions 2 cloves Garlic 2 scotch bonnet chillies 1 knob of Ginger Stock Cubes Salt & Pepper Thanks everyone for watching, please like and comment if you have any ideas or suggestions.
