Kerala style beans stir fry with coconut, onions, garlic and green chilly. An easy and healthy dish that can be served with rice n sambar. It’s also called as “beans upperi”. One of the side dishes for Kerala Sadhya during festivals and occasions.
Ingredients

500g French Beans
8-10 Shallots
2 Garlic pods
2 Green Chillies
2 sprigs Curry leaves
1 Dry Red Chilli
1.25 cups Fresh Coconut shredded
1 tsp Salt (adjust to taste)
2 tbsp Coconut oil
2/2 tsp Mustard Seeds
1/2 tsp Jeera
1/2 tsp Turmeric
Method
------------
1. Clean and finely chop the shallots and beans. Shred or powder the fresh coconut with the green chillies in a mixie.
2. Heat oil in a pan. Add mustard seeds, when they crackle add the jeera and turmeric. Jeera is optional, I add it as I like it's smell.
3. Add curry leaves and shallots and saute for a minute. Now add the beans and salt according to your taste. Close the pan and cook for 10-12 minutes.
4. Stir the beans in between. Add water in the pan if the beans are becoming dry. Check if the beans are cooked, else cook for a few more mins.
5. Add the coconut and mix. Cook closed for another 2 minutes. Garnish with fresh shredded coconut and serve. You can also garnish with fresh coriander if you like.
