Ingredients:
Chicken with bones, large pieces- 1 kg
Whole spices:
cardamom- 3
Cinnamon pieces- 1
Cloves- 3
Black pepper- 15
Bay leaves- 2
Dry red Chili – 1
For Margination:
Turmeric powder- 1/2 tsp
Red Chilli Powder- 1/2 tsp
Salt – 1 tsp
For cooking:
Turmeric powder- 1tsp
Red Chilli Powder- 1/2 tsp
Coriander powder- 1.5 tsp
Cumin powder – 1 tsp
Garam Masala Powder- 1 tsp
Onion sliced - 2 big
Tomato – 1 big
Ginger garlic paste- 1 tbsp
Oil- 4 tbsp
water – 1 glass
Salt to test
Process:
- Heat the oil in a kadhai. Add all the whole garam masalas, bay leaves &dry red chili.
- Stir till it splutters and add chopped onion and fry until light brown.
- Add ginger-garlic paste.
- Mix well & fry on medium heat for around 2-3 mins till raw smell is gone.
- Add tomato stir well then cover it for 2 mins on low flame.
- After 2 mins open the lid, fry on medium flame until oil separates from spices.
- Add turmeric powder, coriander powder, cumin powder, garam masala and salt. Fry until oil separates from all spices.
- Now add the marinated chicken pieces & fry on high heat for 5 mins and 5 mins on medium heat.
- Add potatoes then fry for 4 mins.
- Add green chili and water
- Cover and cook for 20 mins on medium flame and Stir couple of times.
- After 20 mins add 2 green chili for flavor ( optional )
- Chicken is ready
- Serve hot with roti or rice.
