Maldive fish ( Maasi Karuvaadu ) also known as umbalakada, is a specially prepared tuna that is consumed on the Islands of Maldives and Sri Lanka where it is a major ingredient in many curries and consumable goods. It is a type of tuna that is produced by indigenous methods of processing which involves cooking, smoking and Sun Drying to obtain the consumed end product. In the past, the fish used to be sold by the piece, which was a long hard filet. Defective filet pieces were pounded and grilled into smaller fine pieces by a mortar and pestle.
